1 c. chopped onion                                      1 c. uncooked macaroni

2 T. butter                                                     2 qt. water

2 c. cut green beans                                    1 tsp. salt

1 1/2 c. diced potatoes                                1 tsp. basil

1 c. sliced carrots                                        1/4 tsp. pepper

Saute onion in butter in a large kettle. When onion starts to brown add remaining ingredients. Bring to boil then simmer approximately 45 minutes.


6-8 c. cut green beans                                   2 tsp. sugar

1 sliced onion                                                 2 T. horseradish

1 c. sour cream                                              1/4 tsp. salt

2 T. vinegar                                                    pepper to taste

Cook beans 3 minutes, rinse in cold water and drain well. Add remaining ingredients to cooled beans. Marinate overnight in the refridgerator.


2 lb. green beans                                             5 T. olive oil

2 lb. ripe tomatoes                                         1 T. wine vinegar

Salt and pepper to taste                               1 T. Worcestershire sauce

Cook the beans in salt water until tender but still crisp, leaving them whole if they are young and slim. Chill. Scald tomatoes in boiling water 1 minute. Peel and cut them in eighth, removing seeds and pulp. Sprinkle with salt and pat dry with paper towels. Put the oil, vinegar, and Worcestershire sauce in a salad bowl. Mix well and add salt and pepper to taste. Add the beans and tomatoes and mix again. Refrigerate for 1 hour.
